When it comes to eating healthy on the go, Chipotle is one of my faves, because let's face it, I'm THAT girl when it comes to ordering food (without this, substitute that, with an extra side of...).
What I don't love is how sneaky Chipotle's Cilantro Lime Rice is when it comes to adding unnecessary calories.
And it has nothing to do with the fact that rice is a carb.

To find balance with a high carb diet, fat intake is often reduced (which means Chipotle's processed-oil laden rice is out). And even if you're not sensitive about fat intake, cooking oil is a processed food that causes more problems than it solves.
The good news is I've got a copycat, no added fat version of Chipotle's Cilantro Lime Rice that tastes just as good, without the added oils. Pair it with your fave fajitas or something like the Veg Chile Verde from my FREE ebook, The Guide to Nutritious Noshing.

Copycat Chipotle Cilantro Lime Rice (Serves 4)
- 1 cup prepared brown rice
- 2 tbsp lime juice
- 2 tbsp cilantro
- 1/2 tsp salt
Mix all ingredients together (I mixed mine right in the rice cooker). Yep, that's it!
